BORDERON ET FILS, BAKERS

Our chef developed, with François Borderon, seawater bread, which you can taste during your visit to the restaurant.

CHAPEAU LES BOIS

François is a nature-loving gatherer and a specialist in non-timber forest products. He supplies us with mushrooms, nuts and wild herbs.

LE FUMOIR TRADITIONNEL OUSHATA

This traditional Oushata smokehouse uses ancestral Wendat techniques to produce smoked salmon with a unique and distinctive taste.

Balsaï

As one of the few producers of organic black garlic in North America, Balsaï grows its product on the Île d’Orléans.

This producer grows superior-quality baby ginger in Stoneham, a borough north of Québec City.

This farm specializes in the eco-friendly breeding of Highland cattle. The cattle is are raised on pastures near Québec City by Stéphanie Fortin and Louis Philippon.

The Labbé family uses milk from Canadian cows for the production of some of their cheeses, including Origine.
